Good morning fellow foodies! Happy Saturday to you! Today, I’m happy to present day 10 of my 12 days of Christmas Goodies with you. This is an easy one that doesn’t take too much time. It’s also a fun one to do with the kids. They are very good at rolling the balls to form truffles. Parents should do the dipping in the melted almond bark but kids can also help with the sprinkles. There’s something for everyone to do.
These delicious bites are flavored with Speculoos Cookie Spread and if you have never had this stuff, stop what you are doing and go buy some. It’s that good! The label says, “a sweet and spreadable treat made from crushed spiced Belgian cookies”. To me, they taste like graham crackers and Christmas. Can that be a thing? I don’t know but that’s my best description.
These truffles are perfect for teacher or neighbor gifts and they are lovely to look at. Perfect for a Saturday morning quick project.

Yield: 9 truffles
Ingredients:
3 tablespoons salted butter
1/2 cup speculoos spread
1 cup powdered sugar
10 ounces almond bark
Decorative sprinkles
Directions:
1. In a medium microwaveable bowl, combine butter and speculoos.
2. Microwave on high for 30 seconds or until butter is softened.
3. Add powdered sugar and stir to mix. Use your hands if needed.
4. Line a cookie sheet with parchment paper.
5. Use your hands to roll filling into 1″ balls. Place on parchment paper.
6. In a medium microwaveable bowl, add almond bark and microwave on high for 90 seconds. Stir until smooth. If necessary, add 15 more seconds in the microwave to fully melt.
7. Use a fork to dip each ball into the almond bark. Shake off excess and place truffle on parchment paper.
If you have extra bark, feel free to dip some cookies or pretzels in too. I grabbed some Golden Oreos to add to my festive plate.
8. While bark is wet, add sprinkles to the tops of each truffle.
9. Allow bark to set in a cool place. Enjoy!
