Low Carb Cream Cheese Brownies

Howdy from Texas! I hope your weekend is off to a great start. I woke up this morning and went to a craft fair with my friend at the local high school. There were tons of vendors with lots of interesting things for sale. Wreaths, clothing, jewelry, and baked goods were for sale. I love to see other people’s artistic wares on display. It really inspires me and usually leads to new ideas. I usually buy a bunch of items too but today was an off day for me. I didn’t purchase a single thing.

But, I had a fun time visiting with my friends and family when we went out to eat afterwards. Later today, I’ll be taking my middle school daughter dress shopping. She has a semi-formal dance at her school. I realize, as a mom, my tastes are going to be “old” to her. I’m really going to have to let her take the lead on picking a dress but within my guidelines: modest and tasteful. This should be fun.πŸ˜‚ We’ll see what happens…if I post a picture of a bunch of empty ice cream containers, you’ll know it didn’t go well. Lol.

In anticipation of a possible ice cream binge, I’m going to post my low carb brownie recipe. Will it cancel out high calorie ice cream? Certainly not but I’m going to at least try not to go too crazy this weekend. This one is also for all my low carb friends out there who work so hard at a modified diet. Kudos to you!

I put some Christmas swirls on top but you could leave off the food coloring if you’re not ready for red and green festive foods. It’s up to you. You could even add a few chopped nuts on top. These are very low carb, 1.3 grams of net carbs per brownie, so you can feel good about these treats.

Brownie Layer:

2 large eggs

1 cup granulated no calorie sweetener

6 tablespoons butter room temperature

1 tablespoon vanilla extract

1/2 superfine almond flour

1/4 cup cocoa powder

Cream Cheese Layer:

8 ounces cream cheese room temperature

1/2 cup granulated no calorie sweetener

1 egg


1. Preheat oven to 350 degrees Fahrenheit.

2. Spray a 9-inch square baking pan with non-stick baking spray. Set pan aside.

3. Using a stand mixer, cream together butter and sweetener for brownie layer.

4. Add two eggs and mix on low until combined.

5. In a separate bowl, mix flour and cocoa until combined. Pour into mixer and mix in.

6. Add vanilla and mix on low to incorporate. Spread mixture with a spatula into 9-inch square pan.

7. Using a stand mixer, combine ingredients for cream cheese layer: cream cheese, no calorie sweetener, and egg. Mix on low until smooth. Pour mixture on top of brownie layer.

Note: I added drops of red and green food coloring to cream cheese layer and swirled them with a knife to make my brownies festive for Christmas. This is optional.

8. Bake on the middle rack for 25-30 minutes. Cool and enjoy!
