Peppermint Bark Cookies

Happy Friday everyone! It’s a beautiful day and what better way to start the weekend than with cookies! I was totally inspired after I took my 4 year old son to the the new Grinch movie this morning. I know. I know. It’s still November and we haven’t even had Thanksgiving yet. Why am I making Christmas cookies?

There are three kinds of people in the world: those that get ready for Christmas right after Halloween (and they set their radio dials to all day Christmas music), those that wait until after Thanksgiving, and those that don’t celebrate at all. Generally, I fall into the second category but since I write a blog, I know it’s important to plan ahead. Many of you are looking for recipes and ideas now to have on hand when December 1 rolls around. I’m here to help you out.

Plus, I really love chocolate and peppermint together. By the way, the movie was good, better than I expected. But, halfway through the film my son took off his shoes. One landed on my purse and the other one disappeared. I had to get down on the floor with my phone to locate it way under my chair. Needless to mention, theater floors are not the cleanest but I had to get that shoe. So, I get down on the floor to reach under the chair. 🀒 I was successful but a little bit grossed out. After all my years of education in biology (and all of the dissections), you’d think I’d be a little bit desensitized. Nope. Some things still bother me. Oh well!

Anyway, I still was inspired to make my Christmas cookies and they turned out lovely! They made me feel better about getting on the floor (along with some hand washing). Here’s my version of drop cookies flavored like peppermint bark. Yumm-o!

Ingredients:

1/2 cup butter room temperature

3/4 cup sugar

1 egg

1 cup all purpose flour

1/2 teaspoon baking soda

1 teaspoon vanilla

1/2 cup semisweet chocolate morsels

1/3 cup chopped chocolate mint or peppermint candy canes

Garnish:

1 cup semisweet chocolate morsels

1/3 cup chopped chocolate mint or peppermint candy canes

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Using a stand mixer, cream butter and sugar together on low speed.

3. Add egg and mix on low until incorporated.

4. In a separate bowl, mix flour and baking soda together. Add to stand mixer and mix on low. While mixing, add vanilla.

5. Stir in chocolate and peppermint candy.

6. Use a cookie scoop or a spoon and place about 1 tablespoon of cookie dough per 2 inches on a cookie sheet lined with parchment paper or a non-stick baking mat.

7. Bake on the middle rack of the oven for 8-10 minutes or until edges are lightly browned. Cool.

8. After cooling the cookies, place chocolate for garnishing in a microwaveable bowl. Microwave on high for 1 minute. Stir until smooth. Dip 1/2 of each cookie into melted chocolate and place on parchment paper or wax paper. Sprinkle chopped peppermint on to chocolate. Allow to cool and harden. Enjoy!
