Chicken, Bacon and Waffles with Maple Syrup

Happy Fourth of July everyone! Did you know that today is also National Barbecue Day? Woo hoo! I just found that out and I couldn’t be happier. In America, more people cook food on the grill on this day versus any other day. And, do you know what is cooked most often? Hamburgers!

In honor of that trend, I will be posting a terrific how-to on Chicken and Bacon Waffles with Maple Syrup. Wait. What? If you are scratching your head in confusion right now, I apologize. I will give you a delicious cheeseburger slider recipe in my next post, I promise. It’s coming but I wasn’t quite ready on that one.

However, I’m super excited to share this idea that can be used as a meal or an appetizer. I saw something like this on Pinterest quite some time ago and it has been stuck in my head for awhile.

It was super easy and all of the elements cook at the same time and at the same temperature. You can have this on the table in less than 30 minutes.

Did I mention that this is a crowd pleaser too? I was trying to do something quick and easy for lunch since we are having company over for dinner tonight. My teenagers saw these cute little morsels on the table and they got so excited! They instantly sat down and waited intensely for the meal to begin. I passed out the tongs and let them assemble their own mini sandwiches. They disappeared quickly and everyone gave high praise to these tiny bundles. We all thought they were delicious!

Ingredients:

24 ounce package of frozen popcorn chicken (I used the Tyson brand)

1 box Kellogg’s mini frozen waffles

12 ounces bacon

Maple Syrup

Butter

Other:

Skewers

Directions:

1. Preheat oven to 400 degrees Fahrenheit.

2. Prepare 3 large baking sheets with non-stick foil. It will make clean up super easy.

3. Place chicken, bacon, and waffles on separate baking sheets. Make sure your bacon strips aren’t touching each other.

4. Place the sheets of chicken and bacon in the oven and bake for 10 minutes.

5. After 10 minutes of baking, add the mini waffles in the oven with chicken and bacon and bake for 5 minutes.

6. Flip the waffles to the other side and bake for 5 more minutes. Your total cook time for the chicken and bacon is 20 minutes whereas the total cook time for the waffles is 10 minutes.

7. Place the bacon on paper towels on a plate to drain the grease.

8. To assemble, add one mini waffle plus one piece of chicken top, top with 1/3 piece of cooked bacon and then one more mini waffle. Run a skewer through the whole stack.

9. Drizzle with maple syrup and serve. You can also add butter if you like. Enjoy!
