Orange Creamsicle Cookies

Hello fellow foodies! I hope you are having a great weekend! It has been pretty busy at my house. I went and saw the new Star Wars movie, Solo. It was a lot of fun! I liked it a bunch but don’t worry, you won’t find any spoilers here.

I also went to my friend’s house to meet her new puppy. He is so adorable! He is a Keeshond and he looks like he is wearing spats because he has black toes and whitish legs. For those of you who are unfamiliar with this breed, this is what it looks like:

So, you’re probably asking what does this have to do with cookies, Jennifer? Well, I’ll tell you. I can’t go to visit my friend empty handed. So, I took some cookies to her. Not just any cookies but Orange Creamsicle Cookies that have a surprise ingredient. Are you ready for it? They have Jello in them!!! This was an experiment that turned out amazing! I found a recipe for pudding cookies and it got me thinking, could I use gelatin in a cookie? I tried it and sure enough, it works! It provides a fun flavor that is really unique and tasty! The neat part is that you could trade out the orange flavored jello for any other flavor and put your own spin on this treat. You could even make two different flavored doughs and make a neat swirl cookie. The possibilities are endless! Here’s the orange version:

Ingredients:

1 1/2 cups all purpose flour

1/2 white sugar

1 package 3 ounce orange gelatin mix

1 teaspoon baking soda

1/2 cup unsalted butter room temperature

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

For icing:

1 cup powdered sugar

1-2 tablespoons milk

1 teaspoon vanilla extract

Other:

Orange sugar sprinkles

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Line an 11 x 7 inch baking pan with a silicone baking mat or parchment paper.

3. In the bowl of a stand mixer, add flour, sugar, gelatin, and baking soda. Mix on low speed until all ingredients are incorporated.

4. Slowly, add in butter, milk, egg, and vanilla. Mix on low until dough is smooth.

5. Place 2 tablespoons of dough two inches apart from each other on the baking sheet. Bake for 8-10 minutes. Cool.

6. To create icing, combine powdered sugar, 1-2 tablespoons of milk, and 1 teaspoon of vanilla in a bowl. Stir with a spoon until combined. Drizzle over cookies and top with sugar sprinkles. Allow icing to harden.
