Watermelon Feta Fruit Salad

In Texas, it has been very hot and this week we will have highs in the triple digits. In fact, one day it will reach 107 degrees Fahrenheit! Even though I grew up here, I have never come to love the hot summers in Texas. However, there’s always plenty of fun things to do in the summer.

Swimming is a great activity and grilling out too. However, you need lighter sides to accompany the heavy grilled foods. Today, I’m going to share a recipe that is great for any cookout and tastes great! It is very simple but presents very well. In addition, you can make it ahead of time so it’s ready for any event. You’ll be able to focus on staying cool and having fun!

1 cup blackberries

2 cups strawberries cored and cut in half

4 ounces crumbled feta cheese

1/8 cup chopped fresh mint

2 cups seedless watermelon cut into stars, spheres or cubes

1. In a medium bowl, combine ingredients and gently stir to incorporate all ingredients.

2. Refrigerate until ready to serve. Enjoy!
